Here you will find an assortment of gourmet JB's Fat Boy recipes that were user-submitted and jury-approved!


 
Rick’s Babyback Ribs

In large/deep cookie sheet, big enough for your ribs, add the following ingredients:

(The Brine)
2 shots of Jack Daniels in the pan or almost ½ cup
1 cup water
1Tblsp. JB’s Fat Boy Premium Rub
1 tsp. salt
1 tsp. orange Peel
2 tsp. Honey

Prepare the ribs and rub our rub on them. Shake some cracked pepper on top - not too much! Put Ribs in above brine and cover with foil. Cook covered 4-5 hours at 210-220 degrees. Cook the last 30 minutes uncovered. Just before removing the ribs, pour JB’s Fat Boy Barbecue Sauce (any will do!) into a bowl. Remove ribs from cookie sheet CAREFULLY, and pour brine and rib/rub juices into the bowl with the barbecue sauce - mix. Spread the barbecue sauce mixture onto the ribs. Grill on high heat for 5-7 minutes on each side. Flip carefully as they will fall apart. As you plate the ribs, rub with a little more of the barbecue sauce mixture. Serve.


 
JB’s Fat Boy Tender Medallions

2 pounds (approximate) beef or pork tenderloin
2 Tblsp. JB’s Premium Marinade
2 cups apple juice

Cut tenderloins into ½” thick medallions. Mix marinade and apple juice in a plastic container with no-spill lid, until marinade dissolves. Add tenderloins and refrigerate for 4-6 hours or overnight, turning container occasionally. Remove meat from container, discarding liquid. Grill tenderloin medallions, basting occasionally with freshly mixed marinade sauce.


 
Julie’s Kabobs

Large chunks of beef or pork
Cherry tomatoes
Onion, chopped in large chunks
Green pepper, chopped in large chunks
Whole mushrooms
Kabob sticks
JB’s Fat Boy Cajun Rub
Corn Oil

Layer pork and vegetables on kabob sticks as desired. Put thin layer of corn oil on cookie sheet and place kabobs on sheet, turning so all sides are coated in oil. Sprinkle rub over entire kabob, then place on grill surface to cook. Additional rub may be prinkled over kabobs during cooking process, if desired.


 
Our Best Easy Dinner

½” thick round steak
1 Tblsp. JB’s Fat Boy Premium All-Purpose Rub
Potatoes, peeled and sliced
1 can of sliced or chopped mushrooms, drained
celery, chopped in 2” chunks
onions, chopped into chunks
carrots, peeled and sliced

Place steak on a large piece of heavy duty foil on a large cookie sheet. Sprinkle rub over meat and add the vegetables and mushrooms on top. Roll up foil and seal. Can be baked on a cookie sheet at 400 for one hour, or can be grilled in foil for 1 ½ hours, turning occasionally. (Other Fat Boy Rubs can be substituted).


 
Meatloaf

2 lbs ground beef
2 eggs
1 envelope Lipton Onion Soup
1 Tbls Premium Rub
1/2 cup Cottage Cheese
1 Cup bread crumbs

Combine all ingredients. Bake 1 hour at 350*.


 
Fall Football Heat ‘Em, Beat ‘Em Stew

2 lb. lean beef, cubed
1 lg. onion, sliced
1 lb. peeled carrots, cut in chunks
4 celery ribs, cut in 1” pieces
4 peeled potatoes, cut in chunks
2 t. sugar
1 t. salt
1 c. tomato juice
4 drops Cowboy Hot Sauce

Put cubed beef in bottom of a large casserole dish. Add carrots, celery chunks and potatoes. Mix sugar, salt, tomato juice and Cowboy Hot sauce, and poor over top. Cover and bake at 250 degrees for 5 hours, or at 325 for 2 ½ hours or until tender. Add more Hot Sauce as desired to make stew hotter. Serves 8.


 
Sweet/Sour Pork

4 lb. pork roast
1 T. oil
2 onions, sliced
¼ t. pepper
1 t. salt
1 cup JB’s Fat Boy Honey Mustard Sauce

Heat fat in a heavy skillet or dutch oven with a tight fitting lid, add meat and onions and brown, turning frequently. Add remaining ingredients, being careful to slowly pour Honey Mustard Sauce completely over the cooked meat. Cover tightly. Cook in a 300 degree oven for 3 -3 ½ hours or until tender. May also transfer cooked meat to a crock pot, pour sauce over meat, and cook it all 8-10 hours on low heat.


 
Chicken 'n Rice

5 skinless chicken breasts
1 1/3 cup uncooked rice
2 tsp. JB’s Fat Boy Sweet Rub
1 can cream of chicken soup
1 can cream of mushroom soup
1 small can of sliced or chopped mushrooms
1 pkg. onion soup mix
1 ½ cup milk

Mix the two soups and milk in a saucepan and heat until warmed. Put rice into a greased 9” x 13” pan, pour warmed sauce on top, and mix. Rub both sides of chicken with sweet butt rub, place on top of rice mixture. Sprinkle onion soup mix on top of chicken/rice mixture. Cover and bake at 350 for 1 hour.


 
Fried Chicken

6 lbs deboned Chicken Breasts
In a paper bag combine:
3.5 cups flour
1 Tbls Sweet Rub
3/4 cup water

Coat chicken. Fry in Peanut oil til brown.


 
Grilled Potatoes

2/3 cup olive oil
1 Tblsp. Dijon mustard
1 Tblsp. JB’s Fat Boy Chipotle Rub
salt and pepper to taste
2 large potatoes, sliced
2 large red onions, chopped in large chunks

Mix olive oil, mustard, Chipotle rub, salt and pepper. Toss potatoes and onion chunks in oil mixture. Put in large piece of heavy weight aluminum foil, sprayed with Butter Pam. Seal foil tightly closed. Cook on grill for 25-30 minutes.
 
Green Bean Casserole

2 15oz Cans Green Beans
3/4 c Milk
1 tsp Premium Rub
2 tsp worcestershire sauce
1 3 oz can french onion rings

Combine all but onion rings. Bake 45 min @350* uncovered. Add onions and cook 5 min.
 
Potato Casserole

1 2lb package Hash Browns
1 can Cream of Chicken Soup
1 pint Sour Cream
2 Tbls Chopped Onions
2 tsp Sweet Rub

Mix all ingredients. Cover with 2 cups corn flakes. Pour 1/2 cup melted butter over topping. Bake 350* for 1 hour.
 
Cooked Red Cabbage

3 T. margarine or bacon fat
2 onions, thinly sliced
1 heat red cabbage, shredded
1 bay leaf
2 apples, peeled, cored and sliced
½ t. salt
1 small ham bone (optional)
½ cup red currant jelly
¼ cup water
¾ cup JB’s Fat Boy Honey Mustard sauce

Melt margarine in skillet, add cabbage and remaining ingredients except for Honey Mustard Sauce. Bring to a boil and reduce heat. Cook on low heat for 2 hours. Remove bay leaf and add Honey Mustard Sauce five minutes before serving.
