University of Nebraska Dairy Store - Lincoln Nebraska

The UNL Dairy Store or Varsity Dairy, as it was once called, has been selling dairy products since 1917. If you brought your own cup to the store in the late 1920's a nickel would buy all the milk you could drink. At one time, the Dairy Store/Plant provided all the dairy products for the UNL Dormitories. Slowly over time, other suppliers were able to offer lower prices for fluid milk along with other products, so today the Dairy Store only provides products on special occasions.

The Dairy Plant/Store serves several purposes:
To provide experience and jobs for Food Science and related students.
To provide equipment and facilities for class projects and labs, as teaching facilities.
To provide equipment and facilities for research projects involving dairy products and to solve problems within the Dairy Industry.
To provide ice cream and cheese to the general public, using premium ingredients while keeping prices low.

Stopping at the Store has become a tradition in many families, as well as giving our Gift Boxes at Christmas time. We also sell items made in the Animal Science Meat Lab, some convenience items, hoagie sandwiches and nachos. In addition, we offer a rotation of daily specials and a constantly changing selection of ice creams.

The Dairy Plant, now a part of The Food Processing Center has the same goals: to assist food processing business in Nebraska and to promote the idea of value added products in our economy.

Cheese Varieties

Husker: A milk-white colored cheese similar in flavor to Monterey Jack. It was developed at the University of Nebraska by Dr. P.A. Downs. This is our most popular cheese.

Husker with Jalapeno: Our popular husker cheese with the added kick and flavor of jalapenos.

Husker with Caraway: Our popular husker cheese is enhanced with the subtle anise flavor of caraway.

Husker-N-Gold: A yellow and white marbled cheese produced from a mixture of Husker and Colby cheese.

Husker with Dill: Husker cheese with enhanced flavor of dill weed.

Husker with Tomato Basil: Just the right amount of dried tomato and sweet basil added to Husker cheese to create a unique melt in the mouth taste.

Husker with Spinach & Artichoke: A flavorful, spicy hot variant of Husker cheese combined with the great taste of spinach and artichoke.

Mild Cheddar: A yellow-orange cheese with mild, nutty and creamy flavors.

Sharp Cheddar: An aged yellow-orange cheese with rich, tangy flavors.

Smoke Cheddar: A robust cheese with a deliciously distinctive smoked flavor.

New York Cheddar: A well-aged favorite, white in color with a sharp, slightly pungent flavor.

Colby: A yellow-orange colored cheese, similar to cheddar but with a softer and more open texture. A favorite for those preferring a mild cheese.
